In a quest for inspired dishes and as a proponent of the idea that a diet of natural, plant-based foods can be and should be as satisfying and flavorful as any other diet, I spend my time frequenting farmers’ markets, testing new combinations of ingredients and searching for new recipes from creative cooks. Living in northeastern Ohio means that whole, local ingredients are available only about 5 months a year, so I love the warm-weather months when I use fresh greens and a wide variety of vegetables right from the organic growers. In the cold months, my time is spent baking and developing desserts low in calories, especially fat calories.
